‘Amistat’ Oliver Pluck [The East Village]
It seems that a well-earned moment of rest in front of the TV inspired our fifth featured UK Bacardi Legacy Semi-Finalist to create a serve that draws on Bacardi’s troubled past and future hopes. Ladies and gentlemen, I give you ‘Amistat’ by Oliver Pluck, of The East Village bar in Leeds.
Oli tells us “The cocktail inspiration came to me when sitting on my sofa watching the news and seeing the United States and Cuba resolving previous conflicts and relax decades of power struggles to finally become friends once again. With Raul Castro and President Obama in talks of peace and with the trade embargo soon to be lifted, it was John Kerry’s re-opening of the American embassy in Havana that inspired my Legacy Journey”
“With Bacardi’s Cuban heritage always having some part to play in an independent Cuba it was both 55 years from when their land was confiscated and 54 years since the US embassy was abandoned. With so much ‘war on terror’ in this day and age the possibility of creating the next classic cocktail with a story behind friendship, peace, freedom and independence… It had to be about this and there was no doubt in my mind. Why would you not raise a glass to friendship? After all this is what Amistat means in Catalan Spanish”
Starting with a drinks style such as a Manhattan or Old Fashioned, Oli tells us he has created a serve whose component parts make reference to specific aspects or players in the Bacardi / Cuba / US story and that allows ‘tweaking’ in terms of bartender preference. Upgrading the rum to Bacardi Ocho for example, or substituting / blending the sherry. Oli has been successfully running a barrel ageing program for the serve as well!

37.5ml BACARDÍ Carta Oro
12.5ml Woodford Reserve
12.5ml Amontillado Sherry
10ml Coffee Liqueur
3 dash of spiced chocolate bitters
Method: Stir ingredients with ice. Serve on the rocks and garnished with an orange twist
