Wray & Nephew Overproof Rum + Cocktails = Party

Caribbean Curve Ball CocktailA recent trip to The Kenilworth Hotel to see the rather cool Robert Wood resulted in many interesting facts and just as many fab cocktails, but one stood out in our mind for a particular reason – it was built around Wray & Nephew Overproof rum...  Robert was happy to share the recipe and so we very happy to share it with you!

Wray & Nephew is a rum that is legendary to some and I imagine a complete mystery to others.  Any bartender will probably break out into a super broad smile if you ask them about it – as will any Jamaican.  Those that travelled far from the warm Caribbean sun to start another life in the UK or America preach the word but I think that once you get out of those circles the familiarity will drop off.

Wray is an ever present part of life – it’s there as you’re brought kicking and screaming into the world and it will be there as your soul is commended to Heaven by your friends in their nine night vigil.  The fact that it has a million and one uses from curing headaches to appeasing the evil spirits that would inhabit hearth and home (duppies) makes it a versatile spirit to the average Jamaican.

It is a white, 63% ABV overproof rum that pretty much leaves the still and goes straight into the bottle. This is not an oak aged product.  It’s strong – and caution is to be exercised – but it’s also a flavourful rum, with so much more character than you’d perhaps be forgiven for considering.  This rum is a blend of bold pot still rum and the more tempering column still distillate.  The result is packed with bags of fruity aroma flavour which could be overpowering, but used correctly can bring a drink to life.

Rob has managed just that with his ‘Caribbean Curve Ball’: the passion fruit puree has sufficient flavour to stand alongside the Overproof, the falernum compliments and the lime cuts through.  It’s a nicely balanced drink.  If you’d like to make one for yourself, then the recipe runs as follows:

40ml Wray & Nephew Overproof Rum

15ml Velvet Falernum

25ml Fresh lime juice

15ml of 1:1 sugar syrup [50 brix] (if you make you own, use sugar made from sugar cane, not sugar beet)

5ml Passion-fruit purée – e.g. Funkin fruit purée:   http://www.funkin.co.uk/cocktail-ingredients/passion-fruit

[Tip from Rob - try to get the smallest pack possible as once opened, the contents will go off.  Store in the fridge once opened and they should last about 7 days]

Shake over lots of ice and strain into a martini glass or similar.
